MINT PESTO
In a food processor bowl combine 1 cup fresh mint leaves, chopped garlic, 3 Tablespoons cooking oil, and a handful of slivered almonds. Top cooked lamb chops, or toss with cooked lamb for stew and serve over pasta.
MINT SOFFRITO
For this version of the Italian condiment, in a food processor or blender combine 1 cup fresh mint leaves; 1 medium green pepper, seeded and chopped; 2 green onions, chopped; chopped garlic; 1 Tablespoon each lime juice and cooking oil; and salt. Use to stuff lamb chops or serve a long side cooked lamb.
MINT AND LIME PEPPER RUB
Combine 1/2 cup fresh mint leaves, 1 Tablespoon shredded lime peel, minced garlic, sea salt, and pepper. Rub mixture over lamb before roasting.
