FROSTING

Stir 2 Tablespoons grated (lemon, or lime or orange zest) and 1-1/2 Tablespoons juice into a 16-oz can white frosting. Chill 1 hour.

CANDIED SLICES

Bring 2 cups each sugar and water to boil in a wide skillet. Add 2 thinly sliced thin-skinned (lemons, or limes or oranges); simmer 25 minutes, or until translucent. Cool in syrup. Remove; let syrup drip off. Use as a garnish.

SALAD DRESSING

Whisk 3 Tablespoons (lemon, or lime or orange juice), 1 Tablespoon mustard and 1/4 teaspoon each salt and pepper to blend. Slowly whisk in 1/2 cup oil. Makes 3/4 cup.
