Have you ever taken the once delicious casserole out of the freezer only to find it dry with freezer burn? Follow these steps for storing your favorite foods and you can be sure they will taste delicious down the road.

Birthday Cake: To preserve frosted cake, place it in the freezer uncovered until the frosting is form about 2 hrs.Wrap in plastic, then in foil.The cake can stay yummy for up to 8 months. To thaw: Unwrap the foil and then the plastic, then reshape the foil to create a tent over the cake.Pleace in the fridge overnight.

Bagels & Bread: Place in a resealable plastic storage bags,label and freeze.They will stay fresh in frezzer 2 or 3 months,To thaw: Let stand wrapped at room temp for 2 to 3 hrs.Or microwave on defrost for 6 to 8 mins.

Casseroles: The number one mistake we make when freezing casseroles and not lasagna? Not waiting for them to cool to room temp before packing them into the freezer.Let the top of the casserole freeze before wrapping it tightly with heavy foil.Eat within 3 months for maxium enjoyment.To thaw: Defrost in the fridge and add a 1/2 cup of broth, sauce or other liquid before reheating.Need to cook it frozen? Use an instant thermometer to check the center of the casserole at 1 hr.It should reach 160F.

The faster food freezes the fresher it will taste when thawed.So small portions are the way to go.

Before you freeze and put into a second plastic bag, you may want to place a paper towel in each bag to prevent soggy crusts when thawing.
