Ingredients ::
- 9 medium potatoes
- 6 slices bacon
- 3/4 cup chopped onion
- 2 Tablespoons flour
- 2 Tablespoons sugar
- 2 teaspoons salt
- 1/2 teaspoon celery seed
- dash pepper
- 3/4 cup water
- 1/3 cup vinegar
- 2 packages (12 oz. each) bratwurst
- 2 Tablespoons shortening

Makes: 5 to 6 servings
Pare potatoes.
In saucepan, heat 1 inch salted water (1/2 teaspoon salt to 1 cup water) to boiling. Add the potatoes, cover and cook for 30 to 35 minutes OR until tender to a fork test. Drain and set aside.
In a large skillet, fry the bacon until crisp; remove and drain. Then cook and stir the onion in the same skillet with a little bacon drippings until golden brown. Now blend in the flour, sugar, salt, celery seed and pepper. Cook this over a low heat, and stirring until the mixture is bubbly. Then remove from the heat. Stir in the water and vinegar. Return to stove to heat to boiling, stirring constantly. Boil and stir for 1 minute.
Crumble the cooled bacon.
Thinly slice the potatoes.
Carefully stir the bacon and potatoes into the mixture in the skillet. Continue to cook, stirring lightly to coat the potato slices and to heat through.
In another skillet, (you can cook these at the same time your making the German potato salad), brown the bratwurst in shortening, turning with tongs; but do not pierce with a fork. When done, serve with the potato salad.
