Ingredients ::
  • 2 Tablespoons lemon juice
  • 2 Tablespoons olive oil
  • 1 teaspoon minced fresh tarragon
  • 1 garlic clove, minced
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon pepper
  • dash salt
Description ::
From: Jan Ramel, of Kewaskum, WI

For 1 pound of asparagus.

Mix everything in a jar with lid.

Cover tightly and shake well.

Refrigerate for 1 hour before serving.

Cook asparagus for 3 minutes. Blanch. Drain. Put in a covered bowl in refrigerator.

Right before serving, shake the dressing again and pour over the asparagus.
