Ingredients ::
- 1 cup canned pumpkin
- 1/2 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1 quart vanilla ice cream, softened
- 1 prepared graham cracker pie crust (deep dish OR 9 oz. size)
Makes: 1 pie
Prep time: make the night before you want to serve this.
Mix the pumpkin, brown sugar, cinnamon, ginger, and nutmeg in a large bowl.
Then fold in the softened ice cream.
Pour mixture into the crust.
Put into freezer until firm, overnight.
Remove from the freezer 15 minutes before serving, to make it easier to cut.
Garnish with whipped cream and a dash of cinnamon if you like.
