Ingredients ::
- 1 (19 oz.) can white kidney OR black beans, rinsed and drained
- 2 cups fresh corn
- 1 cup minced red pepper
- 1 cup cooked rice
- 1/4 cup fresh lemon juice
- 1 teaspoon salt
- 2 cloves garlic, minced
- pinch of sugar
- black pepper
- pinch of coriander
- 1 teaspoon ground cumin
- 2/3 to 1 cup olive oil
- fresh cilantro, minced
- fresh parsley, minced

Makes: 4 to 5 servings
Toss together the beans, corn, red pepper, and rice in a large bowl.
In another bowl, whisk together the lemon juice, salt, garlic, sugar, pepper, cumin, coriander and oil. Then toss with vegetables.
Garnish with minced cilantro and parsley when serving.
