Ingredients ::
- 3 cups sliced celery
- 1 cup chopped onion
- 1/2 cup water
- 1 can (4 oz.) sliced mushrooms, drained
- 1 can (6 oz.) chopped cashew nuts
- 1 can (4 oz.) pimientos, chopped
- 2 Tablespoons butter
- 1 can (5 oz.) water chestnuts, sliced
- 3/4 pound cooked and clean shrimp
- 2-1/2 cups medium white sauce
- salt and pepper to taste
- 2 cans chow mein noodles

Makes: 10 servings
Combine the celery, onion and water in a frying pan; simmer, covered, until soft, then drain. Put in a bowl, set aside.
In the frying pan, lightly brown the mushrooms in butter.
Combine the celery mixture with the mushroom, add the nuts, pimientos, chestnuts and shrimp.
Mix in the white sauce; and seadon to taste.
Layer the bottom of a 6 quart baking dish with 1 can of chow mein noodles. Then pour the shrimp mixture on top of the noodles. Top the shrimp with the 2nd can of chow mein noodles.
Bake in a 350 degree oven for 30 minutes.
