Ingredients ::
  • 1/4 cup fresh basil leaves
  • 4 large lemons (1 cup), reserve rinds
  • 1/2 to 3/4 cup sugar
  • 4 cups boiling water
  • 3 cups pureed watermelon
Description ::
Makes: 6 (10 oz.) glasses over ice - drinks

In a 4 quart bowl or heat prood pitcher, use the back of a wooden spoon to bruise the fresh basil leaves.

Add the juice from the 4 lemons.

Mix the juice with the sugar.

Pour the boiling water over the juice mixture, stir to dissolve sugar.

Add the lemon rinds and watermelon.

Cover and refrigerate for 2 to 3 hours.

Remove and discard the rinds.

Strain through a mesh sieve into a pitcher.

Add watermelon wedges and fresh basil leaves.

Stir before serving. Serve in glasses over ice.
