Ingredients ::
  • 1 pound cheese tortellini
  • 1 cup bottled Italian dressing
  • 1 cup diced red onion
  • 1 cup diced green pepper
  • 1 pint quartered cherry tomatoes
  • 1 can sliced black olives
  • 2 Tablespoons fresh parsley OR 1 Tablespoon dried
  • 1 Tablespoon dry Italian seasoning
  • 2 Tablespoons sweet basil
  • 1/2 cup extra virgin olive oil
  • 6 Tablespoons white vinegar
  • 1/2 pound crumbled feta cheese
  • fresh Parmesan cheese
  • salt and pepper to taste

Prep time: make the night before you want to serve it.

Cook the tortellini according to the package directions. Drain and rinse with cold water. Put into a large bowl. Pour the Italian dressing over and toss lightly. Chill for 4 hours OR overnight.

Combine the onion, peppers, tomatoes and olives with the tortellini, toss gently.

In a jar with cover, mix the dressing by combining the parsley, Italian seasoning, basil, olive oil, and vinegar. Stir or shake with cover on, vigorously.

Pour dressing over the tortellini mixture, toss gently. Chill for another 2 to 4 hours.

Before serving, add the feta cheese and toss gently. Season with salt and pepper to taste, and sprinkle with parmesan cheese.
