Ingredients ::
- 3 bacon strips, diced
- 1 cup fresh mushrooms
- 1/4 cup chopped onion (red, white or green/or all for color)
- 1 can (6 oz.) crabmeat, drained, flaked and cartilage removed
- 1 cup (4 oz.) shredded Swiss cheese
- 1/2 cup mayonnaise
- 1/3 cup grated Parmesan cheese
- 2 Tablespoons butter softened
- 6 English muffins, split

Makes: 12 servings
In a skillet, cook the bacon until crisp. Remove the bacon, reserve 2 tablespoons of the drippings. Now in the same skillet, saute the mushrooms and onion until tender; in the reserved drippings.
In a large bowl, combine the crab, Swiss cheese, mayonnaise, mushroom mixture, Parmesan cheese and bacon.
Spread butter over the English muffin halves. Top each with the crab mixture.
Place on ungreased baking sheet, and bake in a 400 degree oven for 10 to 15 minutes OR until lightly browned.
Cut each in half to serve.
