Ingredients ::
  • 1 pound 1-inch cubed pheasant breast
  • 1 tobble of Teriyaki marinade
  • 1 pound sliced bacon
  • toothpicks
Description ::

Upland game: Breast out your bird. And make sure you remove all the shot pellets.

Prep time: the night before you want to serve.

Place the pheasant and the marinade in a large zip lock bag. Remove as much air from the bag before sealing. Place the bag in a pan in case of a leak. Refrigerate over night, turning the bag several times.

Roll the bacon (usually 1/2 slice) around a piece of pheasant and secure with a toothpick. Place Rumaki on a broiler pan. Broil on high heat on the top oven rack. When the bacon starts to brown, remove and run bottom side up. Place back under boiler until bacon is done.
