Ingredients ::
  • 1-1/2 pound ground beef, browned well
  • 2 cups celery, diagonal cut
  • 1 to 1-1/2 cups onions, diced
  • 1-1/2 cups water
  • 1/4 cup soy sauce
  • 1/2 cup uncooked, long grain rice
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • chow mein noodles
Description ::
From: Jim Yanke, a retired conductor from the United Pacific Rail, and also an historical society volunteer. He owns a cookbook called 2000 Rail Family Favorites, a book of recipes submitted by Union Pacific employees. This recipe too, is kid friendly.

In a frying pan, brown the ground beef, then drain the grease out.

Add the celery, onions, water, soy sauce, rice, chicken and mushroom soup; stir, and bring to a boil.

Be careful with the hot mixture when you transfer it into a buttered casserole dish.

Put into a 350 degree oven to bake for 1 hour.

Remove from oven with oven mitts (or have an adult help you).

Cover mixture with the chow mein noodles and return to the oven for 10 more minutes.

Remove from oven to enjoy.

Variation ideas:
add mushrooms, water chestnuts, bean sprouts or toasted almonds, it is all up to you the cook.
