Ingredients ::
  • 2 pounds ground beef
  • 1 large onion, chopped
  • 1 medium green pepper, chopped
  • 1 can (14-3/4 oz.) cream style corn
  • 1 can (10-3/4 oz.) condensed tomato soup, undiluted
  • 1 can (8 oz.) tomato sauce
  • 1 jar (2 oz.) sliced pimientos, drained
  • 2 Tablespoons chopped jalapeno pepper
  • 1-1/2 teaspoons salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon pepper
  • 1 package (8 oz.) medium egg noodles, cooked and drained
  • 1 jar (4-1/2 oz.) sliced mushrooms, drained
  • 1-1/2 cup (6 oz.) shredded Cheddar cheese

Makes: 8 to 10 servings

In a large skillet, cook the beef, onions and green peper until the meat is browned and the vegetables are tender, drain oil. Add corn, tomato soup, tomato sauce, pimientos, jalapenos, salt, chili powder, mustard and pepper; mix well. Stir in the noodles and mushrooms.

Transfer the mixture to a greased 13 x 9 x 2 inch baking dish. Sprinkle with cheese. Bake uncovered in a 350 degree oven for 45 minutes OR until heated through.
