Ingredients ::
  • 1-1/2 cups flour
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 6 each fryer chicken legs and thighs OR 1 ready-to-cook chicken OR 2 breasts along with 2 thights (2-1/2 to 3 pounds) disjointed
  • 1 cup orange juice
  • 1-1/2 cups sliced, fresh, canned or frozen peaches
  • 2 Tablespoons brown sugar
  • 2 Tablespoons vinegar
  • 1 teaspoon nutmeg
  • 1 teaspoon sweet basil
  • 1 clove garlic, minced

Makes: 4 to 6 servings

In a bowl, or plastic bag, mix flour, pepper and salt.

Put 1/2 inch of oil into a large frying pan. While it's heating up, dredge the chicken in the seasoned flour. Brown the chicken in the oil, while it's browning, combine in a saucepan: the orange juice and peaches with brown sugar, vinegar, nutmeg, basil and garlic; simmer for 10 minutes.

Remove the chicken when it's browned and pour off the oil, retaining browned bits in the skillet. Replace the chicken with the retained bits and pour fruit mixture over the top.

Cover and simmer for 20 minutes.
