Ingredients ::
- 1/4 cup butter, softened
- 2/3 cup sugar
- 1 egg
- 1/2 teaspoon vanilla
- 3/4 plus 2 Tablespoons all purpose flour
- 1/4 cup cocoa
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1/4 cup strong brewed coffee, cooled
- 3 Tablespoons 1-percent butter milk
- 1 cup chocolate frosting
- 3/4 teaspoon instant coffee granules
- 1 teaspoon hot water

Makes: 8 cupcakes
In a small mixing bowl, cream the butter and sugar. Beat in the egg and vanilla.
In another bowl, combine the flour, cocoa, baking soda, salt, baking powder and cinnamon. Add this to the creamed mixture, alternately with the coffee and butter milk.
Coat the muffin cups with nonstick cooking spray OR use paper liners.
Fill the cups half full with batter.
Bake in a 350 degree oven for 18 to 20 minutes.
Cool for 5 minutes at least before frosting.
Place the the coffee granules in a bowl, dissolve with the hot water; then stir in the frosting. Stir until smooth, then frost the cupcakes, and decorate if you want.
