Ingredients ::
  • 2 cups sugar
  • 1-3/4 cups all purpose flour
  • 3/4 cup cocoa
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup strong black coffee OR 2 teaspoons powdered instant coffee, plus 1 cup boiling water
  • 1 cup buttermilk OR sour milk*
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Makes; 10 to 12 servings

Note: *to sour milk, use 1 Tablespoon vinegar plus milk to equal 1 cup.

Heat oven to 350 degrees.

Grease and flour two 9 inch round pans OR one 9 x 13 inch baking pan.

In a large mixing bowl, blend the sugar, flour, cocoa, baking soda, baking powder and salt. Then add the eggs, coffee, buttermilk, oil and vanilla; beat on a medium spead with electric mixer for 2 minutes (batter will be thin).

Pour the batter into the prepared pan(s).

Bake for 30 to 35 minutes for the round pans or 35 to 40 minutes for the 9 x 13 pan; or use the toothpick inserted near the center test that it comes out clear.

Cool for 10 minutes, remove from pan(s) to wire rack.

Cool completely. Frost as you desire.
