Ingredients ::
  • 6 oz. roasted red peppers
  • 3-1/2 oz. sugar
  • 1-1/2 oz. cider vinegar
  • 5 oz. water
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon crushed red pepper

Char the peppers over a gas flame OR grill OR under the broiler; until pepper skins are blackened on all sides. Place them in an ice water bowl for 10 minutes. Peel off skin and toss. Remove seeds and toss. Then puree the peppers.

Take the peppers and combine all the other ingredients together in a sauce pan; simmer over a medium heat until the product is reduced to a semi thick consistency.
