Ingredients ::
  • 1-1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 6 Tablespoons white sugar
  • 1 egg
  • 2 Tablespoons butter OR margarine
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 2 cups pitted and diced fresh apricots
  • 1/4 teaspoon ground cinnamon, to taste
  • 1 Tablespoon white sugar, to taste

Makes: 12 servings

Preheat the oven to 375 degrees.

Mix flour, salt and baking powder in a bowl.

In another bowl, cream sugar, egg and butter together. Mix in powdered milk and water, stir until well blended. Pour batter into the flour mixture, and beat until smooth.

Spread the batter into a greased 8 inch square pan.

Place evenly with diced apricots on top of the batter.

Sprinkle top with cinnamon and sugar.

Bake in the oven for 45 minutes.
