Ingredients ::
- 3 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 1 Tablespoon vanilla
- 2-1/2 cups all purpose flour
- 1/2 cup baking cocoa
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 teaspoon cinnamon
- dash allspice
- dash nutmeg
- dash ground cloves
- 2 cups shredded zucchini
- 1/2 cup nuts, if desired
- 1/2 cup raisins, if desired

Makes: 1 dozen plus 5 muffins OR 2 small 4 x 8 inch breads.
Combine ingredients in order, in a large bowl; mixing as you add each.
Fill muffin cups 3/4 way, bake in a 350 degree oven for 25 minutes. (note-bread pans would need to bake for 1 hour)
