Ingredients ::
  • 1 (12 oz.) package frozen peaches, partially thawed
  • 1 (10 oz.) package frozen red raspberries, partially thawed
  • 5 Tablespoons butter, divided
  • 1 teaspoon lemon juice
  • 1 cup prepared biscuit mix
  • 2 Tablespoons sugar
  • 1/3 cup milk
  • Cinnamon-sugar (optional)

Makes: 4 servings

In a large covered skillet combine the peaches, raspberries, 3 tablespoons of butter and lemon juice.

Cover, cook, over a medium heat until simmering.

Meanwhile, in a bowl, combine the biscuit mix with the sugar, and cut in 2 tablespoons of butter. Add milk to make a soft dough. Spoon the dough into the simmering fruit mixture.

Cover, and cook until dough is thoroughly baked. About 12 to 15 minutes.

Sprinkle with cinnamon and sugar when serving hot, with vanilla ice cream if you like.
