Ingredients ::
- 1 pound pork sausage
- 1 Tablespoon oil
- 1 egg, beaten
- 1-1/2 cups buttermilk
- 1-3/4 cups cornbread mix
- 1 can apple pie filling
- 1/8 teaspoon cinnamon
- 1 Tablespoon sugar

Makes: 8 servings
In a frying pan, cook the sausage over a medium heat until browned; stir to crumble; drain well and set aside.
Place oil in a 10 inch cast iron skillet OR a heavy baking dish. Heat at 400 degrees for 5 minutes OR until hot.
Combine egg, buttermilk and corbread mix in a large mixing bowl; stir until mixture is smooth. Stir in the crumbled sausage; pour into the skillet. Bake at 400 degrees for 25 to 30 minutes.
Place the sugar, cinnamon and pie filling in a small saucepan; cook over a low heat, stirring constantly until heated. Pour mixture over the finished pie, and serve hot.
