Ingredients ::
  • 1 cup uncooked wild rice
  • 4 Tablespoons butter
  • 1 onion, minced
  • 2 to 4 cloves garlic, minced
  • 1/2 pound mushrooms, chopped
  • 1/2 cup almonds, chopped
  • 3 cups broth (vegetarian or chicken)
  • salt and pepper to taste

Makes: 5 to 7 servings

Soak the wild rice in a boiling water for 1 hour.

In a large frying pan, melt better. Add the onions and garlic and saute for 5 minutes. Add the mushrooms, saute for 5 minutes more. Add the nuts and cook for another 5 minutes.

Drain the rice and add to the mushroom mixture. Add the broth and seasoning.

Pour the entire mixture into a buttered 1-1/2 quart casserole dish and bake covered for 1-1/4 hours, at 350 degrees. Uncover and bake for 15 more minutes, or until the liquid is completely absorbed.
