Ingredients ::
  • 1 cup corn meal
  • 1 cup flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon sage
  • 1 egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup fresh, frozen, or canned corn

Note: this bread can be served warm or cold.

Grease a 8 x 8 inch pan.

Preheat oven to 425 degrees.

In a bowl, mix corn meal, flour, baking powder, salt and sage together. Set aside.

In another bowl, mix egg, milk, and vegetable oil. Now add this to the corn meal bowl. Mix only until blended - it may be slightly lumpy. Stir in the corn.

Pour the mixture into the pan, bake for 20 to 25 minutes.
