Ingredients ::
  • 3/8 cup (3/4 stick) butter OR margarine
  • 3/8 cup cocoa
  • 2 eggs
  • 1/8 teaspoon salt
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1/2 cup flour
  • 1/2 cup shredded coconut

Preheat oven to 350 degrees and grease a 8x 8 inch pan.

Melt butter in a saucepan. Remove from heat, and add the cocoa.

In a bowl, beat eggs and salt until light (about 5 minutes.) Gradually add the sugar, and then add the vanilla. Fold in the chocolate mixture, mixing only until blended. Fold in flour, mixing only until the flour is no longer visible. Add the coconut and stir again - but DO NOT OVERMIX.

Pour batter into the pan, and bake for 25 to 30 minutes.
