Ingredients ::
- 1(16 oz.) small curd cottage cheese
- 1/2 cup finely minced carrots
- 1/2 cup finely minced celery
- 1/4 cup finely minced green pepper
- 1/4 cup finely minced scallions OR green onions
- 1 Tablespoon dill

Makes: 4 servings
Note: you can add other season fresh vegetables if you want.
To save time, you may wish to use a food processor to mince the vegetables.
Mix all the ingredients in a bowl, cover and chill.
If you want to get fancy, serve on lettuce leaves garnished with a radish rose and green pepper rings.
