Ingredients ::
  • Cookie:
  • 1 cup butter
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 oz. (2 square) unsweetened chocolate, melted and cooled
  • 1 egg
  • 2-1/2 cups all purpose flour
  • Mocha Brandy Filling:
  • 1/2 cup butter
  • 2 Tablespoons cocoa
  • 2 teaspoons instant coffee
  • 4 teaspoons hot water
  • 2 teaspoons brandy
  • 2 cups powdered sugar

Makes: 6 dozen cookies

In a large bowl, cream butter and sugar until light and fluff; blend in vanilla, chocolate and egg.

Lightly spoon flour into measuring cup; level off. Gradually add flour to creamed mixture; mix well.

Chill dough for 30 minutes for easier handling.

Heat oven to 375 degrees.

Shape the dough into 1 inch balls; place them 2 inches apart on an ungreased cookie sheet. With thumb, make imprint in center of each cookie. Bake for 8 to 10 minutes.

Let cool for 1 minute before removing from cookie sheet.

In a large bowl, cream butter and cocoa until light and fluffy.

In a little bowl, dissolve instant coffee in water; add brandy and then blend into the butter mixture. Beat in powdered sugar until; smooth.

Fill each cookie with 1 heaping teaspoon of filling.
