Ingredients ::
  • Cookie:
  • 1 cup butter (NO SUBSTITUTES), softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1-1/2 teaspoons vanilla
  • 2-1/2 cups flour
  • 3/4 cup baking cocoa
  • 1 teaspoon baking soda
  • 1 package Rolo candies
  • Topping:
  • 1 Tablespoon sugar
  • 1/2 cup chopped nuts*

Makes: 6-1/2 dozen

Note: *You can use colored sprinkles to dip cookies instead of nuts.

In a large bowl, combine the butter, sugar and brown sugar. Add the eggs and vanilla. Mix well.

In another bowl, combine the flour, cocoa, and baking soda. Add this to the creamed mixture and beat just until combined.

Shape about 1 tablespoon of the dough around each piece of candy Rolo.

In a small bowl, combine topping sugar and nuts. Dip each cookie halfway and place with nut side up on an ungreased baking sheet.

Bake in a 375 degree oven for 7 to 10 minutes or until the top is slightly cracked.

Cool for 3 minutes. Then remove to a wire rack to cool completely.
