Ingredients ::
- 2 medium onions, diced
- 5 stalks celery, diced
- 2 green peppers, diced
- 1 clove garlic, chopped
- 8 cups chicken stock
- 1 Tablespoon black pepper
- 1/2 teaspoon thyme
- 1/2 teaspoon cumin
- 2 Tablespoons chopped parsley
- 1/2 teaspoon Tabasco sauce
- 1/4 cup raw rice
- 1 pound cooked, diced chicken
- 2 cans diced tomatoes with juice

Makes: 6 to 8 servings
Saute the onions, celery, green pepper and garlic in 2 tablespoons of butter in a large pan.
Then add the spices and rice to the pan. Simmer for 30 minutes OR untilthe rice is cooked.
Then add the chicken and tomatoes to the pan. Cook until everything is hot.
