Ingredients ::
  • 6 red potatoes
  • 1/2 cup water
  • 1/2 cup butter
  • 1 Tablespoon lemon juice
  • 2 teaspoons fresh parsley, chopped
Description ::

Wash potatoes and pare them leaving 1 inch strip of skin around center of each potato. Place in a 2 quart glass casserole; add water. Cover and microwave for 13 to 15 minutes, sirring and rearranging once.

Let stand covered for 5 minutes.

Drain well.

Place butter, lemon juice, and parsley in a 1 cup glass measuring cup. Microwave to melt butter. Pour over the potatoes; toss until potatoes are well coated.

Garnish with parsley sprigs.
