Ingredients ::
- 5 cups cooked sliced potatoes (about 12 potatoes)
- 1/2 cup French dressing
- 1/4 cup sour cream
- 2 Tablespoons milk
- 1 teaspoon mustard
- 1-1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup celery, diced
- 1/2 cup onion, diced
- 2 Tablespoons red pepper, diced
- 2 Tablespoons yellow pepper, diced
- 2 Tablespoons green pepper, diced
- 1/2 teaspoon parsley

In a large bowl, marinate the potatoes with the French dressing for 1 hour or longer.
In another bowl, mix the sour cream with milk, mustard, salt and pepper. Add mixture to the potatoes.
Combine the celery, onion, red/yellow/green peppers, and parsley in with the potato mixture.
Sprinkle with additional parsley for garnish to serve.
