Ingredients ::
  • 1-1/2 cups flour
  • 1/2 cups graham cracker crumbs (8)
  • 1/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1-1/2 cups buttermilk
  • 1/4 cup vegetable oil
  • 3/4 cup semi-sweet chocolate chips
  • 1-1/4 cups minuature marshmallows, divided

Makes: 6 muffins

In a bowl, combine the flour, graham crackers, sugar, and baking soda.

In another bowl, combine egg, buttermilk and oil, mix well. Stir in the dry ingredients just until moistened.

Fold in the chips and one cup of marshmallows.

Fill greased jumbo muffin cups 3/4 full.

Sprinkle the rest of the marshmallow on top of each muffin.

Bake in a 375 degree oven for 18 to 20 minutes OR when a tooth pick comes out clean.

Cool for 5 minutes before removing from pan.
