Ingredients ::
- 1 shallot, finely diced
- 3 Tablespoons canola oil
- 1 cup beef broth
- 3 Tablespoons soy sauce
- 1/2 cup orange marmalade
- 2 teaspoons orange juice
- 1-1/2 pounds beef tenderloins, thinly sliced
- 3 Tablespoons diced orange peel
- 1 teaspoon minced garlic
- 2 Tablespoons cornstarch
- 1/2 to 1 teaspoon red pepper flakes
- 1 teaspoon minced fresh ginger
- 2 cups pea pods
- 1/2 cup Mandarin oranges
- hot cooked; rice or noodles

Saute shallot in oil over a medium high heat in skillet.
In a bowl, mix together the beef broth, soy sauce, marmalade and orange juice.
Brown beef in another skillet (in batches, about 1/3 at at time) stir-frying constantly. Remove meat and drain on paper towels.
Use the beef skillet to stir in the orange peel, garlic, pepper flakes, ginger and cornstarch. Cook for 30 seconds, then increase heat to high and add pea pods and reintroduce the beef and shallot. Add the broth mixture and stir-fry an additional minute or two to make sure everything is hot.
Garnish with the Mandarin oranges.
Serve over the rice or noodles.
