Ingredients ::
  • 3 cups sauerkraut, drained
  • 1-1/2 cups tomatoes, drained
  • 2 Tablespoons Thousand Island dressing
  • 2 Tablespoons butter OR margarine
  • 3 packages corned beef, shredded
  • 6 to 8 oz. shredded Swiss cheese
  • 1 (10 oz.) can refrigerated flaky biscuits
  • 3 rye crackers, crushed
  • 1/4 teaspoon caraway seeds

Makes: 6 servings

Spread the sauerkraut into a 13 x 9 x 2 inch baking dish; arrange the tomatoes on top of that.

Spread with dressing.

Dot with butter.

Place the shredded corned beef and cheese over all.

Separate each biscuit into halves and arrange them over the casserole.

Sprinkle with the crushed rye crackers and caraway seeds.

Bake in the oven at 350 degrees for 12 minutes, OR until the biscuits are flaky and golden.
