Ingredients ::
  • 8 slices bacon
  • 1 tomato, seeded and chopped
  • 1/2 onion chopped
  • 3 oz. shredded Swiss cheese
  • 1/2 cup mayonnaise
  • 1 teaspoon dried basil
  • 1 (16 oz.)can buttermilk biscuit dough (reg. size)

Preheat oven to 375 degrees.

Lightly grease a mini muffin pan.

In a skillet over medium heat, cook bacon until crisp. drain on paper towels. Crumble bacon into a medium bowl and mix with tomato, onion, cheese, mayonnaise and basil.

Separate biscuits into halves horizontally. Press each half into a prepared muffin tin.

Fill each with bacon mixture.

Bake for 10 to 12 minutes in oven OR until golden brown.

Repeat with remaining biscuits and filling depending on the muffin pan you use.

These can be baked and rewarmed later.
