Ingredients ::
- 1 pound bulk pork sausage
- 2 cups sliced fresh mushrooms
- 6 cubes bread
- 8 oz. shredded sharp cheddar cheese
- 1 cup chopped fresh tomatoes
- 10 eggs, lightly beaten
- 3 cups milk
- 2 teaspoons ground mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper

Note: this may be assembled a day ahead and refrigerated. Bring to a room temp. (about 30 minutes) before baking.
In a large skillet, cook sausage and mushrooms over a medium heat until meat is no longer pink, drain.
Place half of the bread cubes in a greased 9 x 13 inch baking dish.
Top that with 2 cups of the sausage and mushroom mixture and then 1/2 of the cheese and tomatoes.
Then repeat layers, bread cubes, sausage, cheese and tomatoes.
In a large bowl, combine the eggs, milk, mustard, salt and pepper, pour over the bread mixture.
Bake uncovered in a 350 degree oven for 50 to 55 minutes or until a knife inserted near the center comes out clean.
Let this stand for 10 minutes before serving.
