Ingredients ::
- 1 pound ground beef
- 1/3 cup chopped onion
- 1/3 cup chopped celery
- 2 garlic cloves, minced
- 14 slices french bread, sliced 1/2 inch thick
- 4 large tomatoes, sliced 1/2 inch thick
- 1 teaspoon dried basil
- 1 teaspoon dried parsley flakes
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary, crushed
- 1 teaspoon garlic powder
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons olive oil, divided
- 3 Tablespoons butter
- 3 Tablespoons all purpose flour
- 1/3 cup grated Parmesan cheese
- 1-1/2 cups milk
- 2 cups (8 oz.) shredded part-skim Mozzarella cheese

Makes: 10 servings
In a skillet, cook the beef, onion, celery and garlic over a medium heat, until the beef is no longer pink; then drain and set aside.
Toast the bread and line the bottom of an ungreased 9 x 13 inch baking pan with 10 slices.
Top with half the meat mixture and half of the tomatoes.
In a small bowl, combine all the seasoning ingredients together; then sprinkle half over the tomatoes.
Drizzle with 1 teaspoon of olive oil.
Crumble the remaining 4 slices of bread over the top.
Then repeat layers of meat, tomatoes, seasoning and then oil.
In a saucepan over medium heat, melt butter; stir in flour until smooth. Gradually stir in the milk; and bring to a boil. Cook and stir until thick and bubbly, about 2 minutes. Remove from heat; stir in Parmesan. Pour this over the casserole.
Top with Mozzarella cheese.
Bake, uncovered in a 350 degree oven for 40 to 45 minutes OR until bubbly and cheese is golden brown.
