Ingredients ::
- 14 oz. can chopped tomatoes
- 2-1/2 to 3 cups beef broth
- 1 Tablespoon olive oil
- 1 pound fresh ground pork
- 1 large onion, chopped
- 1 red bell pepper, seeded and chopped
- 2 cups long grain rice
- 1 Tablespoon onion powder
- 1 pound frozen green beans
- salt and pepper to taste

Preheat oven to 350 degrees.
Drain tomatoes, but reserving the juices.
In a bowl, put the tomatoe juices and stock to make 3-1/2 cups total.
Heat oil in a large sauce pot. Add the pork, onion and red bell pepper and cook over medium heat, stirring frequently, for 8 to 10 minutes or until the onion is softened and the meat is broken up and golden brown. Add the rice and cook, stirring constantly for 2 minutes, then add the remaining ingredients, and season to taste. Bring this to a boil, then place in an oven-safe container and bake for 40 minutes.
Serve immediately.
