Ingredients ::
  • 1 cup raw turnips, diced
  • 1 cup raw parsnips, diced
  • 1 cup raw sweet potato, diced
  • 1 cup raw carrots, diced
  • 2 Tablespoons extra virgin olive oil
  • 3 Tablespoons chopped fresh rosemary
  • salt and freshly ground pepper to taste
  • 2 Tablespoons maple syrup
  • 2 Tablespoons balsamic vinegar
  • 1/4 cup 99% fat free chicken OR vegetable broth

Preheat oven to 400 degrees.

Toss the vegetables with oil, rosemary, salt and pepper, then spread on a shallow baking pan.

Bake in the oven for 40 minutes or until veggies are tender to the fork test, stirring once or twice while baking.

Meanwhile, combine the maple syrup, binegar and broth in a small saucepan. Simmer vigorously until it reduced, about 5 minutes.

Drizzle sauce over the vegetables in the oven and bake for another 5 minutes.

Remove veggies and put into a bowl; stir and serve.
