Ingredients ::
- 2 (1 pound) cans sliced beets
- 1 medium onion, sliced
- 1 cup sugar
- 1/2 cup vinegar

Note: this is a refrigerator recipe
Drain the beet juice into a saucepan. Add the sugar and vinegar and bring this to a boil.
Layer the beets in a jar, and pour the hot liquid over.
Cool, and then refrigerate.
