Ingredients ::
- 2 thawed cornish game hens, split down the center
- 3 Tablespoons lemon juice
- 1 clove garlic, crushed
- 1/4 cup orange marmalade
- 1 Tablespoon brown coarse mustard
- 2 teaspoons ground ginger

Makes: 2 servings
Place all ingredients together in a plastic bag. Close the bag and work the marinade around the hens to help mix everything together. Place the bag in the refrigerator for at least an hour or overnight.
Place hens into a 9 x 13 baking dish, pour marinade over and bake uncovered in oven at 350 degrees for 1 to 1-1/4 hours.
