Ingredients ::
  • 1 cup rice, cooked
  • 1 pound fresh asparagus, cut up and cooked
  • 3 (4-1/2 oz.) cans shrimp
  • 2 Tablspoons butter
  • 2 Tablespoons flour
  • 1-1/4 cup milk
  • 1/2 pound sharp cheddar cheese, grated
  • salt and papriks

Makes: 6 to 8 servings

Preheat oven to 350 degrees.

Spread the rice in a buttered 11 x 7 inch baking dish.

Spread the asparagus over the rice.

Then cover tthe asparagus with the shrimp.

Melt butter in a sauce pan, then stir in the flour and cook over a low heat, stirring until smooth and bubbly. Remove from the heat.

Stir in the milk and cheese. Return to heat, bring to a boil. Boil for about 1 minute, stirring constantly. Season to taste with salt and paprika.

Pour the sauce over the shrimp, in the baking dish.

Sprinkle with a little more paprika.

Bake in the oven for 20 minutes.
