Ingredients ::
- 2-1/2 cups dried mixed beans
- 4 cups water
- 2 (10-1/2 oz.) cans chicken broth, undiluted
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 3 cups diced, cooked ham
- 1 large onion, chopped
- 1 (16 oz.) can diced tomatoes with green chilies
- 3 Tablespoons lime juice

Makes: 2-1/2 quarts
Prep time: the day before you need to soak the beans.
Sort and wash beans; place them in a Dutch oven.
Cover beans with water; 2 inches above the beans and soak overnight.
Drain off water, leaving the beans in the Dutch oven. Add water, chicken broth and seasonings. Cover and bring to a boil; reduce heat and simmer for 1-1/2 hours until the beans are tender.
Add the remaining ingredients and simmer, uncovered for 30 minutes, stirring occasionally.
