Ingredients ::
- 1 lemon
- 1/3 cup superfine sugar
- 1/4 cup water
Makes: about 1 Tablespoon
Note: You could use this recipe with Limes, Oranges, and Grapefruit too.
Cut zest from lemon in thin strips, using a zester, a vegetable peeler, or a paring knife, and be careful not to get any of the white pith.
Spueeze juice from lemon.
In a small saucepan, combine the zest, lemon juice, sugar and water and bring to a boil.
Reduce heat and simmer for 5 minutes.
Remove pan from heat.
Remove strips with tongs and spread out on a baking sheet to dry.
Chop for serving if the pieces are too big.
