Ingredients ::
- 1/3 cup bisquick
- 1/4 cup grated Parmesan cheese
- 1/8 teaspoon pepper
- 2 eggs, slightly beaten
- 2 cups shredded, unpared zucchini
- 2 Tablespoons butter

Blend Bisquick, cheese and pepper in a bowl.
Stir in eggs.
Fold in zucchini.
Melt butter in a frying pan.
Drop zucchini mixture by tablespoon into pan. Fry until slightly browned. Turn and brown other side.
Serve warm.
