Ingredients ::
  • 1 teaspoon ground cloves
  • 1 teaspoon pepper
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 Tablespoon brown sugar
  • 1/4 cup kosher salt
  • 1 Tablespoon molasses
  • 4 pounds boneless tied beef rib roast OR chuck roast
  • 12 ounces Gunness stout beer
  • Sliced bread, for serving
Description ::
This needs several days to marinate and at least 7 hours of cooking time before serving.

Makes: 8 to 10 sandwiches

Side order of coleslaw, pickles and chips will go nice.

Mix al spices, sugar, and salt in a bowl. Stir in the molasses to form a dry paste; rub mixture all over the beef. Place the meat in a nonreactive container or resealable bag. Let this marinate for 4 to 7 days in the refrigeratory, turning and rubbing beef once each day.

Place the beef and beer in a wide (6 to 8 quart) pot and add water to just cover the beef. Bring this to a simmer; cover and cook until tender but not falling apart, about 3 hours (30 minutes more if using chuck roast).

Remove from heat, but let beef sit in the pot for 2 hours.

When cool, remove the beef and chill in refrigerator at least 2 hours.

Slice meat and assemble sandwiches with brea; if desired, add horseradish to taste, and cheese.
