Ingredients ::
  • 2 cups dried, rinsed, green split peas
  • 1 ham bone OR ham hock
  • 7 to 8 cups water
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/3 cup chopped carrots
  • 1 dried bay leaf
  • 1/4 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Bring to a boil the split peas, ham and water.

Simmer for 2 hours OR until the peas are almost done.

The last 45 minutes or so, add the celery, onion, carrots, bay leaf, thyme, salt and pepper.

Cook until tender, remove bone and and stir until soup is smooth.

Serve hot!
