  • 1 (10 oz.) box frozen petite peas
  • 1 clove garlic, crushed
  • 1 cup reserved liquid from peas
  • 1/2 cup fresh mint
  • 1/4 teaspoon kosher salt
  • 1/2 cup nonfat Greek-style yogurt

In a medium sized saucepan over medium high heat, bring two cups of water to a boil. Add the frozen peas and garlic. Reduce heat and simmer for 10 minutes or until the peas are tender.

Reserve one cup of the cooking liquid from the peas. Drain the peas and place them, along with the crushed garlic clove, into a blender. Add the reserved cooking liquid, along with the mint and salt. Puree until smooth and creamy.

Pour soup back into the saucepan. Stir in the yogurt. Thin with additional hot water if desired, and serve.
