Ingredients ::
- 2 medium sweet potatoes, peeled and cubed
- 1-1/2 Lb. boneless, skinless chicken breasts, cut into 1/2 inch cubes
- 2 Tablespoons extra virgin olive oil
- 1 large red onion, peeled and chopped
- 1 cup chopped celery pieces
- 1 sweet pepper, quartered, seeded and deveined, chopped into 1/2 inch pieces
- 1 cup red lentils
- 4 cloves garlic
- pinch ground cinnamon
- tiny pinch ground nutmeg
- eas salt and fresh ground black pepper, to taste

In a medium saucepan cook sweet potatoes until tender. Drain and set aside.
In a Dutch oven, saute chicken in olive oil until browned. Add remaining ingredients (but not the potatoes) and 1-1/2 cups of water and bring this to a boil. Reduce heat and cover for 30 minutes, stirring occasionally. Add more water if necessary.
Add the sweet potatoes 5 minutes before serving.
