Ingredients ::
  • 2 medium sweet potatoes, peeled and cubed
  • 1-1/2 Lb. boneless, skinless chicken breasts, cut into 1/2 inch cubes
  • 2 Tablespoons extra virgin olive oil
  • 1 large red onion, peeled and chopped
  • 1 cup chopped celery pieces
  • 1 sweet pepper, quartered, seeded and deveined, chopped into 1/2 inch pieces
  • 1 cup red lentils
  • 4 cloves garlic
  • pinch ground cinnamon
  • tiny pinch ground nutmeg
  • eas salt and fresh ground black pepper, to taste

In a medium saucepan cook sweet potatoes until tender. Drain and set aside.

In a Dutch oven, saute chicken in olive oil until browned. Add remaining ingredients (but not the potatoes) and 1-1/2 cups of water and bring this to a boil. Reduce heat and cover for 30 minutes, stirring occasionally. Add more water if necessary.

Add the sweet potatoes 5 minutes before serving.
