Ingredients ::
  • 1/2 cup sliced sun dried tomatoes
  • 1/4 cup chopped dill
  • 1/4 cup raisins
  • 1/2 cup pine nuts
  • 2 Tablespoons extra virgin olive oil
  • pinch sea salt
  • 1 collard leaf

In a bowl, soak the sliced sun dried tomatoes in 1 cup of water for 10 minutes until soft.

In another bowl, mix together the dill, raisins, nuts, oil and salt. Add the softened sun dried tomatoes (no the juice) and mix well.

To make the wrapper, cut collard leaf from stem. cut leaf in half again so you have four pieces.

Fill each wrapper with a quarter of the tomatoe filling. Fold down the top and bottom edges, rotate 90 degrees and roll up.

This will keep in the fridge for two days.
